2022 In Loving Memory
This wine was made with a bottle of our winemakers late fathers, last made wines 1997 Cabernet Sauvignon. As the label states in loving memory is about celebrating your past and where you come from. The peony flower on the wax seal represents the winemakers daughter and the 3rd generation who has touched this special bottle.
Aromas of raspberry, cherry, cherry nibs, and plum with notes of mint, dark chocolate, rose and raisins. subtle hints of chili pepper, cedar, violets and milk chocolate. With the pallet being all chocolate and fruit with a velvety smoothness. Best served at cellar temperature 18 degrees, and decanted before drinking.
This wine is age worthy and the acid will round as the years go on, I would suggest it could age for up to 6 years, if stored properly. This wine was still made in 100% organic production, so sulfites are low and constant temperature will help keep it from spoiling.
